Pineapple cranberry chicken. Sounds weird, but if you like those two flavors then the recipe's awesome. And really easy, which is why even I can cook it. My friend's coming over to study Hebrew with me, so I offered to make dinner. Unfortunately, cranberry sauce isn't his favorite, but he'll deal 'cause it's free. :twisted:

Veggie chili (it can be made in large quantities and it is cheap) with some homemade poppyseed bread. Oh, how I long for chili and cinnamon rolls!

I ate Panera with my mom - I had chicken noodle soup (my favorite!) and the Sierra Turkey sandwich on Rosemary & Onion Focaccia.

Pineapple Cranberry Chicken

Prep Time: 5 Minutes
Cook Time: 40 Minutes
Ready In: 45 Minutes
Makes: 4 servings

Ingredients
4 pounds skinless, boneless chicken breast halves
1 (16 ounce) can whole cranberry sauce
1 (20 ounce) can crushed pineapple, drained
1/2 teaspoon ground cinnamon

Directions
1. Preheat oven to 375 degrees F (190 degrees C).

2. Place chicken in a lightly greased 9x13 inch baking dish and pierce with a fork. Layer cranberry sauce and pineapple over chicken and sprinkle with cinnamon.

3. Cover dish and bake in the preheated oven for 25 minutes. Remove cover and bake for another 15 minutes, or until chicken is cooked through (juices run clear).

Oh my god! that sounds awesome. I'm a huge fan of funky, easy do-it-yourself meals. I force myself to cook at least a few times a week...or else I'd get burger king every night. :neutral:

Tortellini, Red Sauce, mixed green salad w/ ranch, and some pinot noir. Easy to make, easy to enjoy. Combined with a good movie and I'm happy.

Sort of had two dinners. Had a bowl of Honey Smacks when I got home. Yum. Then an hour and a half later, felt like having a "real" meal, so I made spaghetti with meat sauce. I cook almost nothing that doesn't involve boiling something in a pot and adding sauce. A friend confessed to me once that she thought I did more to prepare semblances of real dinners than she did because I brown my own meat for spaghetti instead of getting sauce with meat in it.

Sounds like me! I had put it off so much one month that one of my dinners was half a can of corn (right out of the can) and an apple. :D
