how the heck does one do this? I know you can make your best effort to schedule interviews before 9am and after 5pm and perhaps during lunchtime...but this can be really tough because they usually want to meet at their convenience...any tips besides pretending to have an illness which requires you to go to the "doctor" a couple times a week? lol

When I was doing this, it was tricky, because I knew I was looking in areas fairly far from where I was living; not in-town jobs. I ended up taking vacation days to travel for interviews...sometimes to the metro area 2-3 hours away, and in the case of my current job, which I got, I left after work one day on the train, travelled 500 miles, went to an interview the next morning in another state, and came back on the train the following day (a Saturday). Prior to doing that, though, I'd had a successful phone interview that I did over my lunch hour, and they invited me to come for an in-person one.

If you explain to an interviewer that you're currently employed, and will need some flexibility on when you're able to interview, and they absolutely WON'T work with you, I'd be suspicious that they wouldn't be very accommodating employers if you did get a job with them. I've always had people be quite understanding. But I also was willing and able to use personal/vacation days to go to interviews.

Yeah, it was pretty limited, though, so I had to make it count. Phone interviews were my friend.

Phone interviews at lunch and using flex hours/paid time off for in-person gigs...
