Cooking for one stinks. I've got plenty of cookbooks, but they all seems to have so many ingredients and take so long... There aren't many good cookbooks out there for single people. Do you have any healthy cookbooks to recommend or any websites for healthy recipes and/or menus!?

I know the feeling. I was reduced to eating microwave dinners for a very long time. Expensive and not very tasty.
Suggestions:
meals.com---tons of recipes and there are many that are good in the Quick & Easy section---plus, you can change the serving size--for one or two servings.
I noticed one or two cookbooks in the cookbook section that are specifically for "cooking for one". I don't know how good they are but maybe thumbing through those in the store would be good.
I made big meals and then ate the same thing all week---Bake a bunch of eggplant and have eggplant parmesan for a week---tuna casserole for a week . . . it gets boring but at least you don't waste food.

I also thought cooking for one sucked, until I learnt to freeze my food. It's not as good the second time round, but it's better than the frozen food you get at the grocery.
The problem with me while I used to cook just a meal at a time is that I would end up burning or overcooking the food. I have found that the timings and the amount of heat on those recipes work better if you are cooking for the recommended amount of people

Hey crazy-girl can I get that recipe for eggplant parmasan, I use to cook eggplant lasagna a long time ago, lost the recipe :(
I like to experiement with different receipes, most of the time, I just make stuff up. I make some pretty crappy stuff sometimes, but I still eat it. My biggest problem is trying to create things that are healthy for me.
