Breakfast of the Week: Oatmeal Applesauce Pear Muffins

This is one of my all-time favorite muffin recipes. These delicious whole grain muffins are ready in just a matter of 30 minutes, and although they are loaded with fall flavor, they are a healthy breakfast and snack option year round. The pears seem to provide a sustaining moisture, while the delicious brown sugar cinnamon & oats topping adds texture and fulfilling taste.

Ingredients


  • 1 1/2 cups ---------- quick cooking oats

  • 1 1/2 cups ---------- whole-wheat flower

  • 1/4 cup ---------- brown sugar

  • 1 tsp ---------- baking powder

  • 3/4 tsp ---------- baking soda

  • 1 tsp ---------- cinnamon

  • 1/2 tsp ---------- nutmeg

  • 1/2 tsp ---------- salt

  • 1 cup ---------- unsweetened applesauce

  • 1/4 ---------- maple syrup

  • 2 large eggs

  • 1 tsp ---------- vanilla

  • 3 tbsp ---------- coconut oil, melted

  • 1/2 cup ---------- milk (dairy or non-dairy; I prefer to use almond milk)

  • 2 large pears, peeled and cut into small chunks (you can use 1 or more pear)

  • 1/2 cup ---------- cranberries (raisins are a tasty alternative)


Topping

  • 1/2 cup ---------- quick cooking oats

  • 1 tsp ---------- cinnamon

  • 2 tbsp ---------- brown sugar

  • 2 tbsp ---------- olive oil


Instructions

  1. Preheat oven to 400 degrees - use 12 serving muffin tin and be sure to use paper liners

  2. Use large bowl to mix oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt

  3. Use a medium bowl to mix applesauce, maple syrup, eggs, vanilla, coconut oil, and milk

  4. Combine these two bowls and mix well. Then add your diced pears (and cranberries / raisins if using). Once thoroughly mixed, move the batter into the muffin tins

  5. For topping preparation: combine together oats, brown sugar, cinnamon, and olive oil. Once thoroughly mixed, sprinkle on top of muffins

  6. Bake at 400 degrees for 18-20 minutes (if muffins are larger, you may need to add a few minutes). Serve warm with butter!
