Mediterranean Herb Crusted Tilapia

Serves: 5


Ingredients:

  • 1 teaspoon ----- minced garlic

  • 1 teaspoon ----- marjoram leaves

  • 3/4 teaspoon ----- mustard

  • 3/4 teaspoon ----- basil leaves

  • 3/4 teaspoon ----- oregano leaves

  • 1/2 teaspoon ----- black pepper

  • 5 tilapia or flounder fillets (roughly 1.5 pounds total)

  • 1/2 teaspoon ----- salt

  • 1/3 cup ----- olive oil

  • 1 1/2 cups ----- chopped spinach leaves

  • 3/4 cup ----- bread crumbs

  • 1/3 cup ----- red bell pepper

  • 3 tablespoons ----- Parmesan cheese

Sides: Farrow with toasted almonds and chopped kale

  • 3 cups ----- water and chicken bouillon

  • 1 1/2 cups ----- farrow

  • 1/3 cups ----- sliced and roasted almonds (add last just before serving)

  • 1 cup ----- chopped kale (put kale in pot with farrow 10 minutes before serving)


Instructions:

  • Preheat oven to 400 degrees Fahrenheit. Place the fish on a foil-lined baking pan and sprinkle with salt. Mix butter and all of your desired spices in a bowl. Brush the fish with the tablespoon of seasoned butter

  • Combine the spinach, bread crumbs, bell pepper, and Parmesan cheese into the remaining butter and stir thoroughly. Apply this mixture evenly across all of your fillets, pressing lightly so the mixture adheres to the top of the fish.

  • Bake for 15 minutes, or test the fish with a fork until it flakes easily
