Oatmeal Apple Breakfast Cookies

Ingredients:

  • 1 1/2 cups ----- oats

  • 3/4 cup ----- almond flour

  • 1/2 cup ----- wheat germ

  • 1 tablespoon ----- cinnamon

  • 2 teaspoons ----- baking powder

  • 1/2 teaspoon ----- nutmeg

  • 1/2 teaspoon ----- ground cloves

  • 1/2 teaspoon ----- salt

  • 2 eggs

  • 1/2 cup ----- almond milk

  • 1/3 cup ----- molasses (honey is a potential substitute)

  • 1 teaspoon ----- vanilla

  • 1 apple diced (I used granny smith)

  • 1/2 cup ----- chopped almonds

  • 1/2 cup ----- cranberries


Instructions:

  • Preheat oven to 350 degrees and line a baking sheet

  • In a large bowl, whisk together dry ingredients: oats through salt

  • In a separate bowl, whisk together the eggs and vanilla

  • Slowly combine the contents of each bowl and be sure to mix evenly

  • Add the diced apples and chopped almonds

  • Scoop the batter onto your prepared baking sheet(s) leaving 2 inches between each cookie. Flatten the batter slightly

  • Bake the cookies for 10-12 minutes or until the centers are slightly firm to touch

  • Cool on the pan or on a wire rack
